Orange Rum Rickey

Some of our cocktail-party ideas were a bit of a stretch, and the après-tennis menu this recipe comes from seems particularly bendy. On the other hand, the drinks are rock solid—this Rickey is pretty basic, but they don’t get any more refreshing than this. Perfect after a grueling five-set ... oh, never mind.

1 1/2 ounces (3 tablespoons) light rum
1/2 ounce (1 tablespoon) Cointreau, or triple sec
1 1/2 tablespoons fresh lime juice
superfine sugar to taste if desired
chilled club soda or seltzer
lime wedge and strip of orange zest for garnish

In a tall glass filled with ice combine rum, Cointreau or triple sec, lime juice, and sugar and top off with soda or seltzer. Stir drink well and garnish with lime wedge and orange zest. Makes 1 drink.
