Pine Cay Pink Flash

February 1997
Pine Cay is an 800-acre island in the Turks and Caicos, and this drink comes from The Meridian Club, the only resort on the island. Rates start at $775 a night, so while you save up for that vacation, you can mix up a few rounds of this bright cocktail. We like it best with a full-flavored gin like Tanqueray.

1 1/2 oz (3 tablespoons) gin
1 oz (2 tablespoons) Grand Marnier
1/2 cup fresh pink grapefruit juice
a splash grenadine

Garnish: wedge of pink grapefruit

In a cocktail shaker filled halfway with ice combine all ingredients and stir well. Strain mixture into a chilled large stemmed glass and garnish with pink grapefruit wedge. Makes 1 drink.
