Ghee (Indian Clarified Butter)

Makes about 3/4 cup

  • 2 sticks unsalted butter
  • Bring butter to a boil in a small heavy saucepan over medium heat. Once foam completley covers butter, reduce heat to very low and cook, stirring occasionally, until a thin crust begins to form on surface and milky white solids fall to bottom of pan, about 8 minutes.
  • Cook, stirring occasionally to prevent burning, until solids turn light brown and butter deepends to golden and turns translucent and fragrant, 10 to 12 minutes more.
  • Pour through a sieve lined with a triple layer of cheesecloth into a jar. Chill, covered, up to 2 months.
