Pork Spice Rub

Makes about1/2 cup

  • 3 tablespoons cumin seeds
  • 2 tablespoons dried oregano
  • 1 to 1 1/2 tablespoons chipotle chile powder
  • 1 tablespoon kosher salt
  • 1 1/2 teaspoons anise seeds
  • 5 cloves
  • equipment:

    an electric coffee/spice grinder
  • Finely grind all ingredients in grinder.
Cooks’ notes:
  • Spice rub keeps in a sealed container in a cool, dark place 6 months.
