  • 6 large egg yolks
  • 1/3 cup plus 3 tablespoons sugar
  • 6 tablespoons freshly brewed strong coffee
  • Beat egg yolks and sugar in a bowl with an electric mixer at high speed until pale and very thick, about 3 minutes.
  • Divide among 4 small cups and add hot coffee, then stir until blended.
Cooks’ note: The eggs in this recipe will not be fully cooked.
